Baked Rosso Bruno (Baked Tomato Dish)

Ingredients
1 T Olive oil (to oil baking pan)
4 DULCINEA™ Rosso Bruno Premium Vine-Fresh tomatoes, cut in half
3/4 Cup Panko bread crumbs (found in the Asian section of most supermarkets)
1/2 t Fresh cracked black pepper
1 t Lemon zest, grated
2 T Butter, melted
4 T Parmesan cheese, grated
 
Preparation

  1. Preheat oven to 400 degrees.
  2. Lightly oil a 8" x 8" baking pan with olive oil.
  3. Arrange tomato halves cut side up in the baking dish.
  4. In a medium bowl, toss the bread crumbs with the pepper, lemon zest, melted butter and Parmesan cheese until well blended.
  5. Sprinkle each tomato half with the crumb mixture, and bake for 20-25 minutes until crumbs are golden brown.
  6. Serve as a side dish with steak or chicken.


Tips and Serving Suggestions
 For a different flavor, try adding 1 teaspoon of Italian herbs in place of the lemon zest
