Fresh Apricot, Goat Cheese & Toasted Almond Salad
Fresh Apricot, Goat Cheese and Toasted Almond Salad (serves 4)
Ingredients-
4 apricots-pits removed and sliced
One-half small red onion, thinly sliced
8 c. mixed greens
4 T toasted almonds, chopped
One-half cup goat cheese, crumbled
Dressing-
1 T white wine vinegar
1 T agave nectar
1 T fresh thyme, chopped
1 T almond oil
One-quarter tsp. sea salt
Cracked black pepper to taste
Instructions-
1. Toss all salad ingredients in a bowl.
2. Drizzle dressing on top
3. Sprinkle cheese on top and enjoy!
