Applewood-Fired Lobster Tails

(CBS13/CW31) INGREDIENTS:

4 Lobster tails (the bigger the better)

1Portion Woodbridge Grill Applewood

4 Cloves diced garlic

2 Tbs Olive Oil

Lemon thyme leaves chopped


BASTING SAUCE INGREDIENTS:

3 Cubes salted butter

Lemon squeezed

Lemon thyme leaves chopped

4 Cloves diced garlic


LOBSTER PREPARATION:

Cut (recommend scissors) open end of shell exposing lobster meat. Baste olive oil on exposed areas. Rub on evenly diced garlic and lemon thyme.


GRILL PREPARATION:

Place Woodbridge Grill Smoker Box filled 2/3 full with Applewood under grill (magnetically) over direct heat area. Fire up grill using medium heat (400f).


GRILLING:

Once smoke develops, place lobster tails shell side down around smoker box and close bbq lid. Recommend using indirect heat. Grill for approximately 20 minutes and remove at 140f.


BASTING SAUCE PREPERATION:

Melt butter and blend in lemon juice, lemon thyme, and diced garlic.


SERVING:

Remove lobster tails from shell and baste.
