Mandarin Orange Dessert Crepes

SACRAMENTO (CBS) ― INGREDIENTS
Crepes:
3 eggs 
2 tablespoons melted butter
1/4 cup Mandarin orange juice
1 cup milk
2 tablespoons sugar
1 cup all-purpose flour

DIRECTIONS
1. Place ingredients in a blender (in order listed)
2. Blend for 30 seconds, DO NOT over 
    beat 
3. Refrigerate batter for at least 2 hours or overnight
4. In a small non-stick pan, make crepes, cool before
    filling. This makes approximately 15 crepes. Crepes freeze very well. Separate crepes with waxed paper, seal in airtight bag. Easy to peel off individual crepes.

1/2 pound unsalted butter
2 teaspoons grated Mandarin orange peel (or citrus zest)
3 tablespoons Snow's Citrus Court Mandarin Orange Syrup
(MIX TOGETHER)

1. Spread heaping teaspoon of filling over cooled  
    crepe, fold into triangles
2. Arrange in a single layer in baking dish, drizzle with
    a little more syrup.
3. Heat in 350 degree oven for 8 - 10 minutes, until
    hot.
4. Serve hot, top with hot syrup from the baking dish,
    slices or segments of fresh or canned Mandarin
    orange and a sprig of fresh mint. Easy.
