Chicken With 40 Cloves Of Garlic

Ingredients:

1 each Whole natural chicken cut into quarters
40 each Cloves of garlic, peeled
2 each Bay leaf and thyme sprig
1/4 cup Olive oil
1 each Bouquet Garni
4 ounces Baby carrots
6 ounces Pearl onions, peeled
8 each New potatoes
Salt and Pepper

Directions:
1. Season the chicken with salt and pepper.  Toss with olive oil and fresh herbs in a bowl, cover and marinate for four hours in the refrigerator.
2. Preheat oven to 300 degrees
3. Place a heavy Dutch oven on the stove top on medium high heat.
4. Remove chicken and herbs from bowl and reserve oil.
5. Add 2 tablespoons of oil to Dutch oven and add chicken skin side down using tong or a large fork.
6. Brown evenly on both sides and add Bouquet Garni.
7. Arrange chicken, garlic and herbs in the Dutch oven being careful not to crowd the pot.  Add remaining oil from the marinade.
8. Add remaining vegetables.
9. Cover tightly and bake until chicken is tender, about 2 hours.
10.Serve directly from the pot.
