Bella Rua's Vegan Soba Noodle Salad

Got a picky teen? Why not have them try Bella Rua's recipe. Bella is a 13-year-old vegetarian who is sharing her recipe for Vegan Soba Noodle Salad.
Ingredients:
¼ cup seasoned rice vinegar (add more if prefer sweeter)
¼ cup Tamari (soy)
3 tbsp toasted sesame oil
1 tbsp chili oil
2 clove garlic, minced
1 tsp grated or minced ginger
1lb dried soba noodle
1 cucumber, thinly sliced
¼ cup chopped cilantro
¼ sesame seeds, toasted!
juice of 1 lime
salt and pepper to taste
Directions:
- Combine first 6 ingredients in salad bowl. Set aside.
- Cook noodles according to package, about 4 minutes, rinse with cold water, drain well. Toss cold noodles in salad bowl with prepared dressing.
- Add the cucumber, cilantro, half the sesame seeds. Toss again. Taste for more dressing and/or seasoning.
- Garnish - Transfer to serving dish and sprinkle with toasted sesame seeds.
NOTE: This super simple recipe is just a base. It's great with shitake mushrooms, mandarin oranges, spring onion, avocado - you name it! Have fun!
