BBQ Chicken Empanada

Ingredients:

1 Box flaky pie crust (store bought)
1 onion chopped
1 pablano chile
2 tablespoon olive oil
1 Roasted Chicken (store bought)
6 dashes of hot sauce
Salt and pepper to taste
3/4 cup chopped green olives

Directions:
Put onion and chili pepper and oil in sauce pan. cook until soft. pull the meat from the chicken, discard the bones and skin. Shred chicken. Add to cooked vegetables.

Add olives. Add hot sauce. salt and pepper to taste.

Method. Cut a 5" circle of pie dough. Place 3 TBSP of cooked chicken mixture in center of the circle leaving a 1/2 " border. Fold the dough over to form a half circle. Press the edges together. Repeat to make the rest of empanadas. Bake at 350 degrees for 12 minutes until golden brown. Serve with your favorite salsa.
